Product Description
The challenge of teaching unit operations in food processing lies in introducing the concepts and principles of engineering, along with their applications, to students with limited background in the engineering sciences. Our goal is to provide students with sufficient background and experience in engineering concepts to become comfortable when communicating with engineering professionals.
This manual has been developed specifically for use in the unit operations courses developed for students in food technology. The topics have been selected to be the most relevant to applications in the handling, processing, packaging and distribution of all types of foods.
The scope of this manual ranges from basic material handling based on fundamental physics, and applications in food processing. They include centrifugation, granular material handling, mixing, milling, peeling and heat transfer.
